I’m very much a rice person so I’ve always gravitated to brown rice as an healthy option. However, brown rice alone can get boring at times. Plus, now that I’ve been trying to hit my fitness goals, it is imperative that I incorporate quinoa into my diet. So in order to avoid sneaking over to Popeye’s, I decided to create a healthy garlic brown rice and quinoa recipe. I’m use to the Seeds of Change quinoa and rice packet, but I wanted to keep this low cost. Of course the baby Bella mushrooms are optional, but I wanted to go all out and be a bit different.
If you’re on a diet or a strict meal plan like I am, I would encourage you to try this garlic brown rice and quinoa recipe as it serves at least four individuals or meal prep(s).
Garlic Brown Rice and Quinoa Ingredients:
- 1 cup of brown rice
- 1/4 cup of quinoa
- 3 cloves of garlic
- 2 green onions, chopped
- 1 tsp of canola oil
- 1 tsp of onion powder
- 1/2 tsp of red pepper flakes
- 1 tsp garlic powder
- Hand full of Baby Bella mushrooms, diced(optional)
- 2 1/2 to 3 cups of vegetable broth
Brief Instructions:
- Clean brown rice by rinsing with cups of water until water is clear.Â
- In a medium pan or skillet, heat oil to medium heat and add rice & quinoa. Cook until light golden brown. After 5 minutes or so, add garlic, green onion, and a hefty pinch of salt and pepper. Cook until garlic has a nice flagrant aroma.
- Add vegetable broth and reduce heat to low.
- Stir in onion & garlic powder, salt, red pepper flakes. Cover and cook for 30 minutes.Â
- During the 30 minutes of cook time, make sure to stir occasionally so the rice does not stick. You may add 1/2-1 cups of water if needed.Â
- Brown rice should be nice and fluffy.

Alternatives: If you want to add mushrooms, cook mushrooms with step 2 with rice and quinoa to get a nice brown cook.

Ingredients
- 1 cup brown rice
- 1/4 cup quinoa, tri-color quinoa or white quinoa
- 3 garlic cloves. minced or thinly sliced
- 2 green onions. diced
- 1 tsp canola oil or olive oil
- 1 tsp onion powder
- 1/2 tsp red pepper flakes
- 1 tsp powder
- Hand full of baby Bella mushrooms, sliced (optional)
- 2 1/2 to 3 cups vegetable broth
- 1/2 - 1 cups water, optional
Instructions
- Clean brown rice by rinsing with cups of water until water is clear. Cleaning the rice throughly will ensure the rice does not yield a "mushy" texture.
- In a medium pan or skillet, coat with olive oil and bring medium heat and add rice & quinoa. Cook until light golden brown.
- After 5 minutes or so, add garlic, green onion (leave a few for the garnish), and a hefty pinch of salt and pepper. Cook until garlic has a nice flagrant aroma.
- Add vegetable broth and reduce heat to low or low simmer.
- Stir in onion & garlic powder, salt, red pepper flakes. Cover with a lid and cook for 30 minutes.
- During the 30 minutes of cook time, make sure to stir occasionally so the rice does not stick. You may add 1/2 - 1 cups of water if needed.
- Brown rice should be nice and fluffy. Taste and adjust seasonings as desired.
- Garnish with green onions and enjoy.
