I was excited to create an easy recipe involving simple ingredients for lobster. Therefore, I wanted to make sure this simple recipe was not complicated, yet flavorful. I would have to say what inspired me to create this recipe is the fact I want to branch out to more quality seafood. Hence, I’m starting to have to many appetizer recipes and not many dinner options, LOL. Because Iâm usually poaching shrimp, so I decided to try it with lobster raw tails and poaching butter! I’m sure you’ll enjoy this butter poached lobster tail recipe as much as I did.

Ingredients:
4 4oz fresh lobsters tails (this recipe does not call for whole lobster, however, this is optional)
5 cups water (for cooking)
Infused Butter Sauce:
Unsalted Butter – I used unsalted butter because I figured the lobster is naturally salty. I wanted to make sure that I controlled the salt content.
Fresh Herbs: Basil, Thyme, Parsley. All three are like my go-to herbs when I want to infuse a sauce.
Kosher salt
Pepper
Garlic cloves
Paprika
Lemon Zest and fresh lemon juice
Unsalted Butter– a high quality butter like Kerrygold butter will be great for the lobster tail meat since it will be infused with herbs.
Herbs: Thyme – Thyme is definitely a staple in my kitchen as it adds depth to any dish. However, in this case, it adds an immense depth of flavor.
Garlic and Lemon – compliments the lobster recipe well as it enriches the sweetness of the lobster meat.

Where can I find good quality lobster?
- You can try local farmer’s market, seafood or fish market, or larger grocery chains like Whole Foods.
Can I use entire lobster?
- I recommend using lobster tails only for this recipe as removing fresh lobster meat from a whole lobster requires additional tools not mentioned in this recipe.
Storage Options:
- Any unused lobster butter can be stored in a refrigerator in an airtight container up to a week.
- Butter poached lobster tails are to be stored in an airtight container up to 3 days in the refrigerator.
Brief instructions with step-by-step photos for lobster tail recipe:
In a large saucepan or dutch oven, add water to the pot and bring it to a simmer. Add lobsters to the water and cook for 4-6 minutes. In a large bowl, prepare an ice water bath for the fresh lobster tails. After recommended cooking time has passed, remove the lobster and place in the ice bath for 2 minutes. Remove the fresh lobster meat and place in a strainer to drain excess moisture.
Using kitchen shears, cut open the lobster shell from the top of the shell to remove the lobster meat from the shell. Place each lobster meat in a bowl. Discard the lobster shells.
In a medium saucepan, melt the butter on a low temperature. Once melted, add seasonings and herbs. While butter and herbs are infusing, place the lobster in the butter. Ensure the lobster cooks in the butter for 2 minutes.
Once a few minutes has passed, remove the buttery sauce from the heat. Using a plate, plate lobster meat and pour the herb-infused butter on lobster meat. Lastly, Garnish with the remaining parsley and enjoy your butter-poached lobster!

Butter Poached Lobster Tail Recipe
Amazing lobster poached in lemon butter sauce!
Ingredients
- 4 4 oz lobster tails
- 5 cups of water for boiling
Infused Butter Sauce
- 6-8 oz good quality butter
- 1/6 cup of thyme
- 1/6 cup basil
- 1/6 cup parsley
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 clove fresh garlic, minced
- 1/4 teaspoon paprika
- 1/2 zest of lemon, + 1/2 teaspoon lemon juice
Instructions
- In a large saucepan, add water to the pot and bring it to a simmer on medium heat (or medium-low heat).
- Add lobsters to the water and cook for 4-6 minutes.
- In a large bowl, prepare an ice bath for the fresh lobster tails.
- Fill the bowl with water and ice.
- After recommended cooking time has passed, remove the lobster and place in the ice water bath for 2 minutes.
- Remove the fresh lobster meat and place in a strainer to drain excess moisture.
- Add lobsters to the water and and cook for 4-6 minutes.
- Remove and place in a strainer
- Holding the center of the tail and sing kitchen shears, cut open the lobster shell from the top of the shell to remove the lobster meat from the shell.
- Place each lobster meat in a medium bowl. You may discard the lobster shells in the trash (see note).
- In a medium saucepan, melt the butter on low heat. This process should only take 1-2 minutes
- Add salt, pepper, and herbs to the melted butter. Place lobster in the butter and cook for 2 minutes tops. Be sure to base the lobster tails with butter.
- If 10 minutes has passed, remove the butter from the heat.
- In your favorite plate, place lobster on the plate and pour the garlic butter sauce on lobster meat.
- Garnish with the remaining parsley!
Notes
Note 1: Please make sure butter is cooked on a low temperature to yield the best results. You don't want the butter to burn.Â
Note 2: Instead of discarding the lobster shells, you can store them to make seafood stock at a later time.Â
