I was originally going for a po’boy, but when I got to Publix, I grabbed croissants instead lol. Because of this, the fried catfish sandwich is not too heavy on breading. I do feel as though it is perfect seeing as though its not very traditional, but still a great recipe.
Catfish breading prep
1 catfish filet
Catfish Sandwich Ingredients:
- 1 catfish filet
- 1 croissant
- Egg
- 1 tbl yellow mustard
- Tomato
- Romaine (Use any lettuce you want)
- 1/2 cup of flour
- 1/2 cup of corn meal
- 1/4 cup of cajun seasoning
Remoulade Sauce Ingredients:
- 1 clove of garlic (minced)
- 1/2 cup of mayo
- Juice of 1/2 lemon
- 1 1/2 tsp of Worcestershire sauce
- 1 tsp of hot sauce
- 1 tsp of dijon mustard
- 1 tsp of chives
- Dash of paprika
- Salt/Pepper
Brief Instructions:
1. Mix all ingredients together for remoulade sauce and cover then place in the refrigerator for ingredients to meld together.
2. Pat the catfish with a paper towel to dry. Note you can cut the catfish in half before the next step or keep it whole. I cut the fish in half and placed it to the side. Next, mix the egg, mustard, and cajun seasoning together. Placed the catfish in the mixture and evenly coat on all sides. Set aside in the refrigerator.
3. Cut tomatoes and place on a paper towel to drain. Set aside. Turn on oven to 350 degrees. Cut croissant in half, set to the side.
4. Next, whisk flour and cornmeal together in a large bowl. Add 1 tsp of kosher salt (if using salt-free cajun seasoning) or just cajun seasoning to the mixture. Carefully drain the catfish using the side of the bowl and coat in flour mixture.
5. Heat peanut oil to 375 degrees. Check oil temp with a thermometer. Carefully place filet in the oil and cook on each side for 3 minutes. Be careful not to overcook because your catfish will become rubbery if you do. Once each side has cooked, place on cooking strainer.
6. While the fish is cooking, I would suggest placing the croissant in the oven for about 5 minutes to get it warm. Once out, glazed it with a little butter. Add fish, drained tomatoes, romaine lettuce, and top with remoulade sauce before adding the top of the croissant. Enjoy!

Notes
- Feel free to use whatever lettuce you would like for your catfish sandwich.
