Broccoli Cheddar Bites Ingredients:
- Broccoli head
- Mayo
- Eggs
- Flax seeds meal
- Salt/pepper to taste
- Pinch of Red Pepper flakes
- Diced onions
- Parsley
- Bread crumbs or substitute with flax seeds
- Freshly shredded white cheddar cheese
Brief Instructions:
1. First bring a medium to large pot to boil and add the fresh broccoli crown. Cook for 5-7 minutes. This step will essentially make “steamed broccoli.” Once broccoli is an emerald green color, take the broccoli head out and set aside and place in a strainer.
2. Once cooled, chop the tender broccoli head into small pieces and transfer into a large bowl.
3. Add chopped parsley and diced onions to the large bowl with the chopped broccoli. Season with salt, pepper, & red pepper flakes. Taste and adjust seasonings to your liking.
4. In a medium bowl, mix together mayo and eggs and combine with broccoli mixture. Next, mix all ingredients until homogenous.
5. Lastly, add the cheese and mix until evenly distributed.
6. Next, mold into small balls and set onto a parchment paper lined baking sheet. If you do not have parchment paper, feel free to use cooking spray. (Note: It is optional to mold into balls or small broccoli tots,)
7. Once youâve molded the entire broccoli mixture, set the broccoli cheese balls in the freezer for 30 minutes to ensure the balls donât fall apart when you cook it in the oven. 15 minutes into the freezer, set the oven to 375 F.
8. As soon as you place the broccoli cheesy bites into the freezer, set the oven to 375 F.
9. After 30 minutes in the freezer, place the prepared baking sheet of broccoli balls into the oven for about 15 minutes.
10. Cook until the broccoli balls are a slightly golden brown. Once done, take out the oven and enjoy the cheesy goodness!
