I really love a good breakfast toast using Ezekiel bread and guacamole. I was randomly mixing things in the kitchen and produced a shrimp toast recipe. I mean I usually don’t hope on the latest health trends, but it truly is good af. Throw a little protein and a couple of veggies and YES. Low-carb is the new thing now so I’m all for it, especially since I was told that low-carb bread has amazing benefits. It’s perfectly filling and if you use low-carb bread just as I did, you are in the game.
Shrimp Toast Recipe Ingredients:
- 1 size of Ezekiel bread
- 1/2 cup of Guacamole
- 2 ounces of mushrooms
- Pinch of salt & pepper
- 1-2 brown eggs
- 1/4 cup combination of basil, dill, oregano, & thyme
- 1/4 cup or less of extra virgin olive oil (EVOO)
- Zest of 1/2 lemon and 1/2 teaspoon of lemon juice
- A pinch of fine sea salt
- 2 ounces of shrimp tossed in 1 teaspoon of seafood seasoning
- Chives to garnish
- Combine herbs in a mortar. Using the pestle, smash the herbs to bring the flavors out. Add lemon zest and juice. Continue to pestle.
- Slowly add the EVOO and fine sea salt. Pestle for a good minute and taste. Adjust seasoning to your liking.
- Thinly slice mushrooms and toss in a pinch of salt and pepper. Heat a small cap full of olive oil in a small pan on medium low heat and cook mushrooms for 5 minutes. Continue to toss mushrooms. Turn off heat and set aside.
- At this point, toast the Ezekiel bread because the next few steps will take less than 10 minutes which is perfect timing.
- Toss shrimp in seafood seasoning and salt. Cook in a small skillet for 2-3 minutes on each side. Set aside.
- In the same pan (wipe out residue) or new, drizzle olive oil and scramble the eggs for 2 minutes and reduce heat to cook on low.
- Using the toasted bread, add guacamole, scrambled eggs, shrimp & mushrooms. Drizzle the herb mixture on top and garnish with chives.
