Remove the beard or "muscle" of the scallop. This will allow the the scallop to cook evenly.

Because the scallops in this recipe are "wet," you will use a paper towel to "dry" the scallops.

Season scallops on a paper towel. As you season the scallops with salt, it will bring out hidden moisture. The paper towel will absorb the moisture.

Avocado oil has a high smoke point that creates a caramelized crust on top of the scallops. Make sure oil is HOT.

Follow the instructions on cooking times. However, make sure you achieve that nice golden crust on the outer layer of the scallop. Any cooking pan will do.
