RECIPE FOR SEARED SEA SCALLOPS 

Seared scallops are an unique dish that is easy to make! These simple rules will not only help you achieve that amazing sear, but a flavorful dish!

Scallop Prep

Remove the beard or "muscle" of the scallop. This will allow the the scallop to cook evenly. 

Ensure scallops are dry

Because the scallops in this recipe are "wet," you will use a paper towel to "dry" the scallops.

Seasoning scallops

Season scallops on a paper towel. As you season the scallops with salt, it will bring out hidden moisture.  The paper towel will absorb the moisture.

Use avocado oil

Avocado oil has a high smoke point that creates a caramelized crust on top of the scallops. Make sure oil is HOT.

Cooking times & utensils

Follow the instructions on cooking times. However, make sure you achieve that nice golden crust on the outer layer of the scallop. Any cooking pan will do. 

Crab gremolata topping

Follow the detailed instructions for making the crab gremolata. Add crab Gremolata after you plate the scallops.
